Seafood and Vegetable Soup

Adriana is making an unusual and delicious soup by combings an ordinary vegetable soup with  seafood.

The veggies are onion, shredded cabbage, celery, carrots, broccoli, and cauliflower,

The seafood are mussels, shrimp, octopus and while fish.

The spices are garlic, bay leaves, salt and chiles to taste.


The cooking begins with the onion, garlic and celery sautéing in olive oil.  Then the other veggies, spices and the mussels are added and covered with water to simmer until the veggies are soft -- about and hour.



While the veggies are cooking, she dices the octopus and fish.

When the veggies are done, she adds the fish and cooks it for five minutes before adding the shrimp and octopus which will cook for only one minute before she urns off the fire.

It is important to avoid over cooking the shrimp and octopus. They'll get tough and chewy.
