Albóndigas con Crema
Meatballs in a Cream Sauce

Ingredients for the meatballs are:

Ground beef and pork - 2 to 1 ratio

1 roll or other bread

1 T marjoram

2 T onion power

1/2 C milk

1 egg

Tones Chicken Seasoning to taste, about 2 T

Ingredients for the sauce are:

1 pint light cream

1 pint heavy cream

2 or 3 T minced onion

a splash each of balsamic vinegar and Worcestershire sauce

Tones Chicken Seasoning to taste, about 2 T

chipotle to taste (optional)

Adriana begins by tearing the roll into small pieces which she soaks in milk.

Then she adds all the meatball ingredients and begins mixing by hand.

When the meat is well mixed, she rolls it into small balls which are sautéed in olive oil.

While the meatballs are cooking, Adriana prepares the sauce.

First, the onions are sautéed in olive oil. 

Then the creams and other ingredients are stirred in and simmered briefly.

When the sauce is ready, the meatballs are added and simmered briefly.

They were so good.

 

I was pleased that Adriana gave me some to take home for supper.
